I had some leftover chocolate buttercream frosting the other day, after making my husband’s favorite chocolate cake and decided I’d add a little sunbutter to the mix since I knew it would be a great filler for our secret pocket cookies we were planning.
It made a great nut free Nutella copycat… and yes, it was so delicious in the pocket cookies, we made them both again (the cookies and the chocolate spread).
Here’s how we were able to duplicate the spread:
Chocolate Sunbutter Spread
Ingredients
- 1 1/4 cups powdered sugar
- 1/4 cup + 2 T. cocoa powder
- 1/4 cup + 2 T. safe butter alternative, softened
- 1/2 t. vanilla extract
- 1/4 c. safe milk substitute
- 1/2 cup sunflower seed butter
- 1 to 2 T. boiling hot water
Directions
- Blend together powdered sugar and cocoa powder.
- Add butter and mix gently until fully blended (mixture will be dry and crumbly).
- Add milk and vanilla.
- Add sunflower seed butter and mix until fully blended.
- Add water, 1 T. at a time until desired consistency is reached.
