Make a family night out of creating these fun and simple cookies with the kids while teaching them about love, inclusion, and forgiveness via Dr. Seuss’s classic tale of The Grinch Who Stole Christmas.

Growing Heart Grinch Cookies (top8free, gluten free, vegan)
Ingredients
- 1 1/2 cups safe-for-you all-purpose flour blend
- 1/4 t. salt
- 1/4 t. baking powder
- 1/8 t. baking soda
- 2 T. fruit pectin
- 1/2 cup butter alternative
- 1 cup sugar
- 1 t. vanilla
- 2 T. lime juice
- 2 T. lemon juice
- green food coloring
- 1 cup coconut (optional)
- 1/2 cup powdered sugar
- strawberry jam
Directions
- Mix together flour, salt, powder, soda, and pectin. Set aside.
- In a large mixer with paddle attachment, cream butter alternative and sugar.
- Add vanilla, lime juice, and lemon juice.
- On low speed, gradually add flour mixture.
- Add food coloring.
- Cover bowl and chill in refrigerator for at least one hour.
- After dough is chilled, shape into ping-pong-sized balls and roll in powdered sugar.
- Place on lined cookie sheet and using small fingers, make heart-shaped indents in each.
- Fill each indent with strawberry jam and return pan to refrigerator to chill for another hour (this is a great time to read/watch and discuss the grinch story)
- Heat oven to 350 degrees.
- Place chilled cookies in oven and bake for 13-15 minutes.
- Remove from oven and let cool on pan completely.
